Sales of gluten free products are forecast to grow beyond $2 billion in the next few years. To reach this stratospheric plateau takes far more consumers than the very, very small percentage of the population diagnosed with celiac disease. And long-term growth is not going to come from consumers who buy gluten free products because they’re jumping on the latest weight loss or allergy-based “free of” bandwagon.
